Fix Up Southern Hospitality With Shrimp and Grits

Whether you’re gearing up for your upcoming girls weekend getaway to the Gulf Shore, or just looking to transport yourself and your girlfriends there through your tastebuds, this is the recipe for you! Bring the southern hospitality to your own home with some authentic, down-home shrimp and grits. This recipe makes ya just wanna say “bubba gump shrimp” just like Forrest did! His momma would be proud. 


INGREDIENTS to feed four girlfriends


3 cups water

1 cup evaporated milk

1/2 teaspoon salt

1 cup quick cooking grits (not instant)

1/2 cup grated sharp cheddar cheese

1/2 cup sour cream

1/4 cup extra virgin olive oil

1 tablespoon salted butter

1/2 cup finely chopped onions

1 pound medium gulf shrimp peeled and deveined

1/4 cup chopped green onion tops

Few drops of hot sauce (optional)


DIRECTIONS


Step 1

Bring water, milk and salt to rapid boil over high heat. 


Step 2

Add grits gradually, stirring with whisk. Reduce heat to medium and continue to whisk for five minutes. 


Step 3

Remove from heat, add cheese and sour cream stirring till cheese is melted. Set aside and keep warm. 


Step 4

Put olive oil and butter into a large skillet over medium heat until butter is completely melted. Add chopped onions and cook until translucent, stirring often. 


Step 5

Add shrimp and cook until pink all over, stirring often. Do not over cook. 


Step 6

Add shrimp mixture to grits and cook on low heat for 10 minutes. Stir as needed. 


Step 7

Remove. Place in serving dish, and garnish with green onion tops.
