Make Sure You Husk Some Corn for Fall

 

Our daughter, Lex attended the University of Nebraska. If you haven’t been to a football game there, you need to put it at the top of your list! The energy level, the camaraderie, the midwest vibe are all something to witness at least once in your lifetime. It’s the perfect place for a very fun fall girls weekend for you sports fanatics. 


It’is a well-known fact that veggies are most people’s least favorite food source, especially kids. However, can anyone resist corn? Nebraska’s nickname is “The Cornhusker State” and this time of year, summer meets fall with the start of the University of Nebraska’s Cornhuskers Football. GO BIG RED!!! Corn chowder is the perfect mix of the last of summer corn and the beginning of football season. The cooler weather calls for hearty, stick-to-your ribs stews, and chowders. This Corn Chowder recipe fits the bill.


Ingredients for 6 | Multiply by degree of hunger, divide by number of girlfriends!


INGREDIENTS


  • 6 slices bacon, cut into small strips
  • 1 large onion, chopped
  • 1 lb. russet potatoes, cut into small cubes
  • 4 cups low-sodium chicken broth
  • 2 tablespoons all-purpose flour 
  • 1/2 cup whole milk
  • 3 cups fresh or frozen corn, defrosted and drained if frozen
  • 1/2 cup heavy cream
  • 1 cup white cheddar
  • kosher salt
  • freshly ground black pepper
  • 1 tablespoon chopped chives, for garnish

DIRECTIONS


Step 1


In a large pot over medium heat, cook bacon until crisp. Remove bacon onto a paper-towel lined plate. 


Step 2


Drain all but one tablespoon fat and cook the onions until translucent, about 4 minutes. 


Step 3


Add potatoes and chicken stock and bring to a boil. Reduce heat, cover, and simmer for about 10 minutes, or until the potatoes are tender.


Step 4

When potatoes are tender, whisk flour into milk, then stir that mixture into the pot.


Step 5


Add corn, cream, cheese, and bacon (reserving some for topping, if desired) and bring soup back to a boil, cooking until the cheese is melted, 2 to 3 minutes more.


Step 6


Season with salt and pepper to taste, and garnish with chives before serving. A piece of warm, hearty, crusty bread for dipping is always a plus.

If you don’t like sushi, then checkout their grill menu. This sake bar has, hence, sake along with beer wine and my favorite-Patron SIlver tequila. It’s clean, it’s beautiful, the food is phenomenal, and the service is on point!
