Bake Up Montana Mountain Cookies

Montana Mountain Cookies

 

Who craves sweets? Who doesn’t need the calories? That’s right, you, me and all our  girlfriends! These cookies are so amazing, you’d never believe how healthy they are. Gluten-free, sugar-free, and vegan, they’re an awesome treat that you don’t need to feel guilty about enjoying. Health-wise, they’re just like eating a bowl of oatmeal! If you and your girls are gearing up for a dude ranch adventure, bring some of that Montana flavor home with these cookies.


Ingredients for 16 cookies | Multiply by degree of hunger, divide by number of girlfriends!

 

1 3/4 cup finely grounded pecans (about 3 cups halved)

1 cup finely grounded rolled oats (about 1 1/2  cup oats)

1 cup rolled oats (not ground)

3/4 cup whole oat flour

1 teaspoon baking soda

1/2 teaspoon sea salt

1/2 teaspoon cinnamon

2 tablespoons milk

1/4 cup melted coconut oil

2 teaspoons vanilla extract

1/3 cup real maple syrup

2/3 cup chopped raisins

1/2 cup rough chopped pecans (about 1 cup halved)

 

Step 1

Preheat oven to 350 degrees. Assemble your ingredients. 

 

Step 2 

Put pecans in a food processor and pulse until finely ground. Measure 1 3/4 cup and dump into mixing bowl. Grind oats in the food processor, measure 1 cup and add to the bowl.

 

Step 3

Measure and add the rest of the dry ingredients: whole wheat flour, baking soda, rolled oats, cinnamon, and salt. Mix together. 



Step 4

Using your fist, make a little “well” in the center of the mixture, and add all the wet ingredients: milk, melted coconut oil, pure vanilla extract, maple syrup. Mix together.

 

Step 5

Chop the raisins and add to the bowl. Rough chop the pecans (meaning, leave them in bigger chunks). Add them to the bowl, and with the other ingredients until well combined.

 

Step 6

With a spoon or a cookie scoop, drop about 1 heaping tablespoon of dough onto the cookie sheet. Flatten each scoop of dough with your hand.

 

Step 7 

Bake for 10 minutes (Do not over bake!) Remove from oven and let sit on baking sheet for 2 minutes before placing onto a cooling rack.
