Dive into Tropical Hawaiian Chicken

There are a lot of great places to go with your girlfriends, but Hawaii is definitely high on my list. VRBO or Airbnb? Make sure you are staying at a place that has a grill because you cannot go wrong with this dish!! This recipe for Hawaiian chicken is chicken thighs that are flavored with a tropical coconut marinade then grilled to perfection. An easy dinner option that's perfect for entertaining with your “chicks”.

Ingredients for 4 | Multiply by degree of hunger, divide by number of girlfriends!

INGREDIENTS

For the chicken

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1/2 cup low sodium soy sauce
  • 1/4 cup water
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon minced garlic
  • 1 teaspoon sesame oil
  • 1/2 cup light coconut milk
  • 1/4 cup pineapple juice
  • 1 cup pineapple slices fresh or canned

For the coconut rice

  • 1 cup white rice I prefer short grain for this recipe
  • 1 1/4 cup light coconut milk
  • 1/2 cup water
  • 3/4 teaspoon kosher salt
  • 2 teaspoons brown sugar
  • cilantro leaves and lime wedges for garnish optional

Directions

Step 1

For the chicken: Combine the soy sauce, water, brown sugar, garlic, sesame oil, coconut milk and pineapple juice, then pour into a container or resealable bag

Step 2

Add the chicken and marinate anywhere from 2-24 hours.

Step 3

Heat the grill to medium. Remove the chicken from the marinade and grill for 6-7 minutes on each side or until chicken is cooked through.

Step 4

Add the pineapple to the grill and cook for 2-3 minutes per side. Arrange the pineapple and chicken on a serving plate.

Step 5

For the rice: Bring the coconut milk and water to a boil. Add in the salt and rice. Cover, reduce heat to low and simmer for 18 minutes. Stir in the brown sugar.

Step 6

Serve the chicken and pineapple with the coconut rice. Garnish with lime wedges and cilantro if desired.

If you are staying in a hotel or resort I HIGHLY recommend these two restaurants:

Dukes Barefoot Bar Waikiki Beach Oahu, HI

Make yourself at home, where the legend Duke Kahanamoku grew up swimming, surfing, canoeing and bodysurfing. In 1929, Duke rode a monster wave for 1 1/8 miles at Waikiki, likely the longest ride in modern times. You know that image in your mind of Waikiki Beach, the one with Diamond Head in the distance and outrigger canoes in a turquoise bay of warm water? It’s real and it’s here every day. Splash, body surf or surf, in the warm, turquoise water just below Hawaii’s icon, Diamond Head – just like Duke did.

Hula Grill On Kaanapali Beach, Maui, HI

With local, line-caught fresh fish, Maui grown produce, & all-natural meats, you will experience Hawaii’s unique culinary and cultural melting pot crafted and served with the true spirit of aloha.
