Here’s the scoop: Lavender ice cream!

We know the lavender plant is known for promoting health and well-being, and we think this recipe for ice cream does both! In our Let’s Go blog You and Your Girlfriends Need Each Other we gushed about the beauty of Ojai, California, and one of its premier events, the Lavender Festival. We can’t recommend that destination enough for your next girls weekend. In the meantime, why not start building the excitement by making this soothing treat? 

 

 

Lavender ice cream

Ingredients for 12 servings | Multiply by degree of hunger, divide by number of girlfriends 

  • 3 cups milk
  • 2 stems lavender
  • 8 egg yolks 
  • 1 ½ cups sugar
  • 3 cups heavy cream

Directions

Step 1
Heat the milk and lavender in a 3-quart saucepan over low heat until warmed through. 


Step 2

Remove from heat, and allow lavender to infuse for about 20 minutes. Remove flowers.


Step 3
In a large bowl, beat together the egg yolks and sugar. 


Step 4

Whisk the lavender-infused milk into the egg mixture, then pour it back into the saucepan.


Step 5

Heat the mixture over low heat, whisking constantly, until the mixture thickens and can coat the back of a spoon, 7 to 10 minutes. 


Step 6

Remove from heat. Cool slightly, about 5 minutes. Stir in the heavy cream. 


Step 7

Transfer the mixture to a bowl, and chill in the refrigerator for at least 4 hours.


Step 8
Pour the chilled mixture into an ice cream maker, and freeze until it reaches "soft-serve" consistency (according to manufacturer's directions).


Step 9

Transfer ice cream to a lidded container. Cover surface with plastic wrap and seal. For best results, ice cream should be placed in the freezer at least 2 hours or overnight
